Versatile Vinegar

Tropical Salad

 

 
3 pink grapefruits
1 large papaya, 3 avocados
3 tablespoons olive oil
2 teaspoons pink peppercorns, lightly crushed
salt to taste

Cut rind from pink grapefruit, removing white pith at the same time. hold grapefruit over a bowl to catch juice and cut between membranes to remove segments. Peel papaya, cut in half and scoop out seeds with a teaspoon. Cut flesh into thin slices. Halve avocados lengthwise, remove pits and peel. Cut flesh into thin slices. Arrange grapefruit segments, papaya slices and avocado slices on serving places. Mix together 2 teaspoons reserved grapefruit juice, olive oil, crushed peppercorns and salt. Drizzle over fruit and serve at once. Makes 6 Servings
